Sunday dinner at the Thompsons

April's Chicken...

I know this is a weird name...but it is what my family calls it because my mom got the recipe from her friend April...Heaven forbid we just call it chicken tostadas...to my family...it will always be April's chicken!



1 pound chicken (cut into thin strips)
1 green pepper (cut into thin strips)
1 onion sliced
1 T olive oil

Marinade:
2 T. orange juice
2 T. vinegar dash of tabasco
1/2 tsp. garlic powder 1 tsp. oregano
1/2 tsp. cumin
1 tsp. season salt

Marinate chicken for 10 minutes. Stir fry chicken, pepper and onion. Fry tortilla shells till crisp. Serve stir fry mixture on shells with refried beans, lettuce, tomato, cheese, olives, sour cream and homemade salsa.

***Tonight we actually had them taco style with a rice and black bean recipe that I tried for the first time...and didn't like, so I shall spare all of you the time in trying it.  This chicken is one of my favorites and we have it in a variety of mexican dishes.  I love cumin a lot and that mixed with the oregano and the OJ is just too good.  I actually marinate mine for longer then 10 minutes...but 10 is fine.  You should try it, it's delicious!
