What to do....

with that bag of frozen blackberries that has been in the freezer for far too long...

Make some homemade syrup to drizzle over belgian waffles with a little "cream" (as lil D says) on top...yummy!

We drove home from the in-laws today...and after far too many meals out...the last thing I wanted was another "drive-through" meal.  So, even though our fridge literally has milk, eggs, butter (and soda:) the thought of a home cooked meal didn't sound possible.  Till I remembered that bag of blackberries...a little searching on the internet and a delicious home cooked meal was conjured up (with a side of scrambled eggs too).

Blackberry syrup (my version)
1 bag frozen blackberries
3/4 C sugar
1 T lemon juice
1/8 tsp salt
1 T butter
1/8 tsp vanilla

Thaw blackberries.  I strained them A LOT to get out some of the seeds and the centers of the blackberries.  Once I strained it the best I could...I added some of the pulp till I had almost 1 1/2 cups juice/pulp.  Add that with the sugar, lemon juice and salt to saucepan and bring to a boil.  Boil for 4 minutes, stirring constantly. Turn off heat and skim off any foam.  Add butter and vanilla and stir well.  

The recipe says you can freeze...we used almost all of it up, so no freezing for us.  I was pleasantly surprised with how delicious this syrup was.  My husband was even more surprised.  He is not a fruit syrup kind of guy...but he LOVED this.  And now with the extra waffles in the freezer, he can have some more for breakfast!

Is it bad to admit that I'm not sure I've ever had blackberries? Looking at this photo though, I think I may need to try this recipe. Especially because it seems fairly easy (a requirement for me!) :-). Have a great week!
